The youngest of the three Briscoe brothers, all wingers, Luke left Hull FC where his brothers Tom and Jack were already playing, to sign for Leeds. Unable to win a first team spot there, he was loaned out to Hunslet and Wakefield, but a move to his hometown team Featherstone worked out wonderfully. After a successful loan spell, he signed for Rovers and established himself as a first team regular. A reliable and efficient finisher, and important element of Briscoe’s game was his ability on kick-returns and runs from acting half-back. Strong in the collision, he was also an expert at quick play-the-balls and would often attract penalties.

His first full season at Featherstone was modest in comparison to what happened the following year. He opened the 2018 season in sensational form, smashing records as he went on an incredible 16 match try scoring run, creating a new UK record for consecutive try scoring. Despite being loaned back to Leeds before the end of the season he still finished the season with 33 tries (38 overall) for Rovers and became the first Featherstone player since Paul Newlove to top the try scoring charts for the whole league.

He then signed full-time for Leeds Rhinos, but was loaned back to Rovers for periods during the 2019 and  2020 seasons under the Dual Registration system. A first team regular at Headingley throughout 2021, he then re-signed for Featherstone the following year, and resumed his customary roles of try scoring and gaining territory with his midfield runs. His 22 tries in 31 games in 2022 made him club top try scorer for the second time, and he followed that with 12 tries in 23 games the year after. Both seasons saw Rovers fall just short of their Super League objective, and a large clear-out of players saw Briscoe leave for Doncaster after seven years of service and 94 tries for the club.
